Best Banana Pancakes:
1 cup low fat cottage cheese
1 medium banana
2 eggs
1 cup oats
pinch cinnamon
few drops vanilla
Huck it all in a blender and blend until smooth-ish. Makes 8 4-5 inch pancakes. They need somewhat lower heat than ordinary pancake mix, but they brown up nicely. Since they don't have any gluten in them, there's no internal structure per se, but they don't need to be cooked until solid. M likes them cooked until they're just about blintz solidity. Unless you're trying to keep away from the cholesterol in eggs, they're actually good for you and will stick to your ribs until lunch.
